Thanks for posting your experiment and results. That's some good info. Perhaps some of the reason coke tastes best is because it adds a lot of sugar to the meat during the marinade?

 

I like Chef's idea of half milk, half coconut milk with a touch of allspice. I put some allspice in a sausage recipe this year and it was excellent.

after eating all the stuff(especially the guacamole dip!) Chef made at the Tucson get together I would definatly try any recipe he had.

Maybe you could get a hold of huntn coues mom and pop

They seem to have had a pretty good recipe for jerky

Although, stills smells pretty gamey
