Who says the old guys taste bad.

First let me preface this by saying I am probably the furthest thing from a gourmet that you can get. I could be perfectly happy with cheerios and milk all three meals. Yet I just made myself one of the best meals I ever had in my life. I defrosted the rump steak from my 06 coues. Jim Heffilfinger himself aged the buck to be 6 1/2 years. You may think not the beginnings of a great meal, two year old meat from a 6 year old deer! Well you think wrong. It turned out to be awesome. Real tender, excellent flavor, bitchin texture. Some are thinking a two week marinade. Nope no marinade, just a spice rub. My secret this time was using a generous amount of lemon pepper spice that really went well with the deer meat. Before I give you the simple recipe let me tell you about meat prep. I cut up all my own meat. I don't call it butchering because I have no idea how to do particular cuts, yet my meat turns out better than any professionally butchered meat I have gotten from others. First I try to only freeze roast size cuts (3 pounds) because I think it keeps better that way. I wrap in butcher paper with packaging tape and double bag in freezer bags. I have never had freezer burn this way. Any small parts I turn into hamburger. Tenderloins are not frozen, but eaten as a victory meal.

 

Now here is how I made tonights awesome meal. Defrost meat in warm water, don't microwave!. I cut the meat when it is still partially frozen. It is much easier to work with. I remove all the white sinewy stuff(what is that called) and cut into 1 inch thick medallions. Lightly flour meat shake and bake style. Make spice rub. One part garlic, one part Lawreys, 3 parts lemon pepper. I apply this to meat shake and bake style in another bag. Saute' in canola oil on medium heat in shallow frying pan. Cook until meat is medium edges of meat may look black. Serve with wild rice and some Red Two Buck Chuck with one ice cube. Walla, food heaven.

I tell ya, it sounds good... but from the start i was callin BS lol!

 

 

I agree on not microwavin the meat... that seems to bring out the "gamey" smell in the meat.

HAHAHAHA!!!! Congrats on your success, Bob!!! Keep up the good work! I too, was cooking today and impressed everyone over here with my talents in cooking Turkey breast and Halibut filets!! ;) :P :lol:

 

I can honestly say that I have NEVER met a Coues deer that did not eat well! Spikes... to 6 1/2+ yr old deer.... All, the best table fair you can find, anywhere..... IMO! I do also agree with you that how wild meat is handled/cared for makes it good or bad. I have a friend that has used lemon pepper for years & years.... I had to try my own stuff, cuz I am stubborn as a mule... :rolleyes:... But, I have now proven to myself that lemon pepper is THE best rub for all meats, but I use it most in my deep pit. ;) I have yet to try it in the frying pan but will keep it in mind next winter when there is fresh coues to be had around here! Thanks for the tip! ;)

 

BTW..... Jack Daniels is one of the finest injection marrinades I have ever used.... and cheaper than the fancy stuff.... if you do any of that kind of cookin'. :)

Gino, I tend to agree with the coues being awesome table fair.... What do you think about mountain kitty (lion for everyone else)?

 

I usually soak game meat in milk to get rid of the gamey taste, all though my lion was already soaked in mothers milk and I tell ya, that meat was FANTASTIC!!!

Casey, you didn't shoot it off the mother's tit did you? My guess would be you were aiming for mom and accidently hit kitty? What's the story. Maybe you told it already but I missed it.

I ate both my lions and thought they tasted like pork. :) TJ

I have had lion twice and once was cooked to death on a grill... Sucked, and the other was deep pitted... and it tased like chicken... :lol: :lol: I'd eat it again any time that someone wants to cook it for me... but not likely that I'll be asking anyone for some lion to cook up for myself. ;) I have never soaked meat in milk... milk was hard to come by sometimes growing up, so I soak some meats in salt water over night or a few ours.
