Processing javelina

So there we are. Jerky time.

Come across this.. not sure what it might be . I treat every javelina like it has trichanosis and we freeze them 90 days before they hit the dehydrator.

 

any ideas?

There has never been a case of javelina carrying trichanosis.

And even if they did, freezing does not kill the type of trichinella worm that is most prevalent in the southwest.

You guys might be right. 
 

ive never had a pig tested- just went off what I’ve heard from others. There was a podcast on Meateater that said freezing for 90 would ensure it would die. The dehydrating process would certainly ensure it.

it can’t hurt to do it anyways..

But what’s in that pic? Some kind of worm or other thing?

A javelina is not a pig. Maybe that's why they don't carry it.
