Red Rabbit Report post Posted March 3, 2008 A friend helped on a recent NM Oryx hunt and told me about the non-taste. He said it was not gamey at all, but also had no flavor. Kevin Report post Posted March 3, 2008 Doug, The texture is similar to elk. It is quite a bit lighter in color than elk though. It has it own taste I guess, since I can't come up with anything it tastes like. It is very mild though. If you ever get to SW New Mexico let me know and I'll cook you a bit up! WFGinNM Report post Posted March 3, 2008 To me it does have an extremely mild taste, and tends to taste like what you put on it. People I know go crazy over it saying "it's the best they've ever had", I don't know if that is because it's exotic or just bland. I would rather have lion, elk, or whitetail.
