mattys281 Report post Posted April 30, 2018 Haven’t done it on elk yet bu the last couple deer we did was kinda combo gutless/ gutting method. Hung em from the hind quarters, peeled the skin off cut off the front quarters, back meat and as much as we could from the ribs, then gutted and took inside meat, and last thing was to cut off spine and whatever bones were left hanging away from the hind quarters. Gutting is much easier that way and you don’t have to worry about getting hair all over the meat or rupturing the gut sack as all the meat down hill from it is already gone.
