Javelina Meat?

I know im getting ahead of myself. I should probably kill it first. But what do you all do with the meat? In the past we usually just do summer sausage, chorizo, and breakfast sausages. Any other options out there?

Just plain ground and make spaghetti or Italian sausage but just bulk not stuffed in cases for meat loaf or stuffer peppers. Cleaned trimmed ready to eat your only looking at 8-10lbs .

 

Last year I bought the lem jerky canon and made snack sticks out of the two I killed.

I usually do hot Italian sausage. Chorizo. Or even bbq sandwiches.

yep. Some times I’ll mix in pork but only so there enough to be worth the effort

pit bbq! shred the meat and build ya some burros and freeze them for future hunts and quick lunchs. go to you tube to The Mountain Project you tube page and watch the pit bbq video, its awesome meat. cant get the link to come up here.

Ended up the whole chunk up bacon and all and making bbq pork style with some provolone and a pickle if it suits you. I'd do it again!
