4Falls Report post Posted November 2, 2017 I would like to make some jerky from the bear I just harvested. I know when cooking the meat I need to get to 145 degrees, obviously, in my dehydrator its not going to get that hot. What say you? Also, does anyone have any jerky recipes to share? Couzer Report post Posted November 2, 2017 Yea you need to at least hit 145 degrees but I cooked all my meat to 165 degrees as recommend for pork to kill trichinosis. So I myself wouldnt risk it.
