devinv Report post Posted November 14, 2007 Was wondering if anybody knew somebody who makes tamales? I got to keep half of my friends deer because i did the butchering, grinding, and packaging for him. If you could reply or PM with suggestions, or if its somebody in your family could you give me a ball park estimate per dozen? thank you! I slow roasted then shredded about 8lbs of deer and 8lbs of pork already, and kept the broth / lard.

ghost hunter Report post Posted November 15, 2007 Making tamales aren't all that hard. We usually make 20-30 doz when we do them. By the time you do the meat, get the maza done up and put them together, you'll be into the project several hours, but to do it isn't all that hard. Not much better that doing a "quality control" taste test on the first batch that comes out.
elmergoo Report post Posted November 16, 2007 The girlfriend has all her corn husks out on stand-bye. I will ask her if she is interested. She sticks with a red chile version if that interests you. She usually makes a batch over Thanksgiving and again over Christmas. Let me know if you like red chile and I will ask her.
DesertBull Report post Posted November 16, 2007 There is nothing better than a great tamale and there is nothing worse than a bad one. You know, the ones that are 1/2 lb of masa and 1 oz of meat. Those will plug up a horse.
