I think the best green chili has been coming from Lemitar, New Mexico the last few years. The soil in Hatch has been depleted, definitely not the same green chili anymore.

What is the point of roasting them? Are they meant to be eaten as is when they are roasted? Never had them like that but I've smelled them a couple times and it smells great.

+ Myself x 100...had my first batch Saturday...ate at least 8 solo roasted hatch chilis for breakfast...

Ever had the red ones? Tried one of those for the first time and wow, it was hot...

There are good green chilies from a lot of spots in NM. We have good ones here in SE NM as well. The grocery stores have now got the roasters out front. I love the smell of late summer and fall here in NM.

 

CatfishKev, you roast them to get the skins off of them. Remember to wear gloves, do not scratch your face or take a piss after peeling a bunch. You will regret it. You must wash your hands well.

Ate some more tonight and milk just doesn't kill the pain anymore. But they go great with tortillas...I will have to top coues cheeseburgers with them, that sounds good!
