ej20 Report post Posted September 9, 2016 Hey everyone I was able to take an antelope this morning. It was an awesome hunt. Pictures and story still to come. I'm looking for recommendations for meat processor in the valley. I want to make summer sausage and pepper sticks.
Eagle mountain ranch Report post Posted September 10, 2016 First off congrats... 2nd DIY, then you can take the meat you want and have it made into summer sausage etc .. I'm not 100% sure but I'm sure there is plenty of info/videos on the web of processing the meat yourself. If not I'm sure others will chime in on a good place to take it too in the valley. Goodluck and again congrats can't wait for the story.
Nitemann Report post Posted September 10, 2016 In the valley if your wanting smoked sausage, sticks or jerky I would go with Southwest Processing or Von Hansens.

Zeke-BE Report post Posted September 11, 2016 Take the back straps home and one ham leg and cut those into steaks. Take the test and make you sausage. Antelope is awesome meat.
