I would not even think twice. I want a AZ bear in the worst way. Mainly, I just want to make a bunch of bear ham, bacon and pastrami.

Basically just corned (salt sugar pink salt) cured chunk of meat that is then covered with coarse ground pepper and smoked. I do it with deer a lot.
