PhxDT Report post Posted April 5, 2016 I smoked my elk roast in an offset smoker. Managed to a beef temp on a typical roast (forgot what it was, this was 3-4 years ago). I did wrap it in bacon to keep it moist. It was the best tasting piece of elk I have ever had. Had the texture of a filet mignon. 2 Share this post Link to post Share on other sites
