Couestracker Report post Posted March 3, 2016 Make no mistake, I love tacos. And hunting. Why I didn't do this before now, I don't know. I've always made my own Italian fennel sausage out my javelinas, and kept back some roasts for green chili, but this time I thought I'd grind 1 pound just for tacos. I'm glad I did, next time I'll probably grind up several for future taco nights. All I did was mix about 10% meaty pork fat with cleaned (no tendons or silver skin) javelina meat, then run through the grinder 3 times. I made the tacos last night. Pretty simple, cooked/chopped up the meat, drained the little bit of liquid, added homemade taco seasoning, added 1 cup of water, simmered until most of the water was gone. I didn't have most of the usual condiments this time, just cheese, salsa and lettuce, but they were still great. I enjoy cooking game meals. 4 Share this post Link to post Share on other sites
