elkaholic Report post Posted February 11, 2016 I'm very sorry to report that as of Jan 1 - 2016 DENMARK MEATS -- will no longer be processing game meat word has it their commercial end of sausage making doesn't allow for time to do wild game meat orders anymore to bad - this will mostly effect hunters whom have enjoyed the great tasting sausages from them they started doing whole animals in 84 and then in the late 90's it was deboned meat only and now no game meat at all . Then I found Denmark Sausage and they did a great job on my 2015 coues deer summer sausage. I think I have one roll left. Meat cutting and wrapping is a skill that needs experience to develop and sausage making is an art form. Not to mention the retentiveness and OCD to be fastidiously clean and meticulously organized so the meat you take in is the meat you send out.
