Bob I make a dry rub with a bunch of different seasonings and then I also make a baste with bbq sauce and seasonings. i do mine around 200-220 degrees with mequite coals for a base and mesquite chunks and some apple chips. You can use whatever wood but I like mesquite. But don't leave it on too long cause it doesn't take much to cook elk. Then when I am done I will vacuum seal the rest and heat it up whenever I'm hungry. Share this post Link to post Share on other sites
