rossislider Report post Posted October 27, 2015 Two big old mature bucks taken this weekend provided me with a LONG day of processing meat today. Started at 6:00 AM and (with a short break to unpack ans mow the lawn) just finished cleaning up the mess before the Cardinals game started. Got:-Backstrap steaks-40 lbs of burger-40 lbs of breakfast sauasage-40 lbs of Italian sausage-10 lbs of jerkyThese were our first mule deer. Being a couple of old bucks, I wondered about the taste. Coues79 Report post Posted November 5, 2015 That's great. What recipe did you use for your breakfast sausage? I like to add a bit of beef fat for my burger.
