Bill - I'd accept an invitation to your javelina roost any day of the week - did basically the same thing but soaked it in light mixture of teriyaki sauce and lime juice instead of bbq and lots of onion slices .

  1. my wife makes this soup!!! sooo good.

obviously use ground elk for your meatballs

she doesn't like cilantro so she uses fresh mint. actually adds some to the meatballs in her recipe I top mine with fresh cilantro and mint and we make rice to go with it and eat with warm corn tortillas.

don't forget your favorite hotsauce!!!!

albondigas soup

NGREDIENTSNutrition

12lb chorizo sausage, casing removed (not the fully cooked kind)

1egg, beaten

2garlic cloves, minced

12carrot, minced

12cup cooked rice

12cup cilantro leaf, chopped

12teaspoon salt

14teaspoon pepper

1teaspoon ground cumin

 

Albondigas Soup

6cups chicken broth (I usually use nonfat and low sodium)

12cup onion, chopped

3stalks celery, cut in chunks

1(16 ounce) can diced tomatoes(with nothing added)

12teaspoon ground cumin

1teaspoon oregano

12cup cilantro

1large zucchini, sliced

salt

pepper

  1. Make the meatballs first: Combine everything and mix thoroughly.

Form meatballs and roll between your palms (Otherwise, meatballs will fall apart in the soup).

You should make around 20 to 24 meatballs, set aside.

Combine chicken broth, onion, celery, tomatoes and their liquid, cumin, oregano and cilantro leaves in a large pot.

Bring to broil, and reduce heat and simmer for 10 minutes.

Drop meatballs in the soup (Make sure the soup is slightly boiling, the meatballs need to be cooked quickly).

Return to simmer and cook another 10 minutes.

Add zucchini and cook 10 minutes.

Season with salt and pepper, to taste.

You could top the soup with cooked rice, or just by itself.

I made the Italian Elk Meatballs last night. Substituted turkey sausage for pork and chopped cauliflower instead of breadcrumbs. Sprinkled generously with Italian seasonings. They were awesome!
