I'm wanting to do the same thing, from the advice I've got and from questions I've asked other I think I'm going to go with a good point and shoot camera with good zoom and put it behind my spotting scope. That will give me good video at those long ranges but the only thing I have to figure out is how to keep it behind the scope so I can video my shots too.

I use a digi mount like ths one, can run any camera through my scope

in this video i used an iPhone 5, phone skope, and a Vortex Razor HD 20-60x85 spotting scope.

 

Shooting in the Arizona desert with some friends. Testing some hand loaded 210gr Berger VLDs for the Phoenix Custom Rifles 300 RUM and some 168gr VLDs for the Tikka Super Varmint .308

at :55 on the video below you can see the adaptor that I use with my kaibabs and video camera....i think jim white makes the stud for the binos and includes the slick mount for the camera...picked it up at Archery Headquarters...
