Couestracker Report post Posted March 16, 2014 Well, can't talk about elk or antelope stuff, so I'll talk about food. After 11 javelinas, you'd think I would have tried this before now. When I processed my last one, I ground two separate pounds (15% pork fat) and set aside for tacos and hamburgers. (I already posted about the tacos). The burgers were really awesome! Complemented with sliced red onion, hatch green chili and jalapeño bacon...yummy! Helped wash it down with some beer margaritas. The next javelina I process, it'll have to be split up between Italian fennel sausage and plain ground for more tacos and hamburgers. Share this post Link to post Share on other sites

I enjoyed our visit yesterday and that San Carlos bird was beautiful. azslim.........being the bacon lover that I am I definitely will give that a try as well. Thanks for sharing.
