Some quail and a nice jack

I went by myself for the first time about 3 weeks ago just now getting around to post. Saw lots of quail it was my first time chasing them and man it was fun probably saw about 30 but couldn't get it done, got these guys in 27a just walked a wash until I spooked them up. Jack rabbit came by random ate the quail and rabbit that night I love "fast food"

Buddy of mine years ago, shot a big jack rabbit while we were quail hunting. Lugged him around all day, took him home and cooked him . After trying all night to get it edible, he finally gave it to the dog. The dog got sick on it. Must of done something wrong, huh?

Most of what I am seeing on eating jack rabbits is agreeing with muleskinner...tough and then some; one quote I saw said 'my old Army boots would have been more tender.'...the old original Herter's company, in their 1969 catalog says "jackrabbit is actually as good or better than venison,' but I have several books from Herters, including all three volumes of their cookbook, and nowhere does it have recipe for jacks or ever suggest they are edible...

 

so how do you cook 'em?

I've done them in the classic stew, pasty's, green/red chilie. My favorite is the G&F's website reccomendation of teryaki backstraps. marinade in teryaki sauce and grill them. I've never had to cook them a special way just because it's jack rabbit :P they cook up like any other game meat. and remember, they're in the hare famiy, not much different than eating a northern hare.

I misspoke earlier. The "Bull Cook and Authentic Historical Recipes and Practices" (Vol 1) by George Leonard Herter and Berthe E. Herter does have a recipe for 'Belgian Jack Rabbit or Snowshoe Rabbit" This book, long since out of print, is actually pretty easy to find on Ebay and on Abebooks.com (where I got mine)....Herter books are fun to read when you are in the right mood and often have some useful and/or interesting tidbits in there but sadly, Good Ole George was not apparently hopelessly addicted to the truth so there is a lot of BS in its purest form in the very same books...

I cook them just how you would a roast put it in the crockpot with carrots onion garlic potatoes and your favorite marinade, put it in at 9am ready to go and falling off the bone by diner time. I personally enjoy them more than any other small game even cottontails although I have heard of people not so maybe it's all about how you cook it

just like any game.. you have to cool the meat down ASAP> it makes all things taste like they should!

crock pot 6 hours with some good veggies and you will be surprised surprised surprised!

Agreed I just took my girlfriends little brother out and shot 2 jacks Saturday gonna throw them in a crockpot sometime this week
