Adicted Report post Posted September 23, 2013 I ran out of elk ground cause my kids just love it...we eat about 5 pounds a week of it. I have a ton of steaks left and am borrowing my buddies big electric grinder. I'm going to 80% Elk to 20 % Pork shoulder. I want to thaw it our just enough to grind and grind it and mix it real quick and refreeze. Have you guys done this and will I have to worry about Bacteria or getting sick. 123456 Report post Posted September 23, 2013 Let it thaw in the fridge. Make sure it does not get much warmer than fridge temperature, and you will not have any problems. It is actually easier to grind if it is slightly still frozen. Share this post Link to post Share on other sites
parrita58 Report post Posted September 24, 2013 I agree with 12345, leave it a little frozen after thawing it in the fridge. Fill a bucket with ice cold water and put your grinder pays in it so they are cold and process the meat as quickly as possible and re freeze it. You should be fine after that.
