parrita58 Report post Posted July 24, 2013 Roasted tomato salsa 5 Roma tomatoes 1/2 white onion 2-3 jalapeños or serranos , depending on how hot you want it 1/4 cup fresh cilantro sprigs 1-2 cloves fresh garlic roughly chopped Salt and pepper On a hot grill or hot pan, I like mine better on the grill gives it a better flavor, grill the first 3 ingredients make sure to not over grill the jalapeños because they loose their flavor. After all ingredients are grilled put tomatoes onion jalapeños cilantro garlic and salt and pepper in blender or food processor and pulse them thru do not blend so you can get a nice chunky salsa with texture. Finish with a squeeze of lemon. Works great with barbecues or grilled chicken and also to snack with tostitos chips. Hope you enjoy Share this post Link to post Share on other sites

Hope you enjoy that is one of my wife's favorite salsas. although we do not grill the ingredients but rather, we broil them in the oven. we prefer to make it the night before so it has had time to cool in the fridge.
