Venison Mash

Not sure why I call it that, but that is what comes to mind when I make this dish. Made a bunch last night into different forms, and it was excellent!

 

I used three pounds of ground venison, 3 zucchini shredded, 2 squash sliced and quartered, brown rice, some seasoning, about 6 or 7 large tomotoes peeled (to remove that curly skin that ends up in your teeth at the end!) and diced finely. Mixed everything together and made 5 large stuffed bell peppers, 3 loafs and a skillet. Bells and loafs cooked for about one hour. Skillet took about 15 minutes. Everything was so tender and soft!!!!!

 

Vaccum sealed and froze up the loafs and will use those as quick meals or camping meals. Stuffed bells were sealed and frozen individually except for two which are today's lunch. Skillet was last night's dinner and today's lunch for kids and wife.

 

TJ, I tried to call you to drop some off hot last night, but I got your answering machine and left you a message. Sorry buddy! Wanted to surprise you and Peg after a great turkey season for both of you!!!
