liver

My taste-buds are tainted I think, by the monthly forced 'liver and onions' nights I endured as a kid. I remember having to choke it down drowned in ketchup! lol

 

That being said, I have many friends who love liver and one of the treats at hunting camp (if we're blessed with a kill) is sauteed heart and also liver & onions served fresh that night. I've grown to like it a bit...... Besides, almost anyting wrapped in bacon will be awesome! ;) I'll try it this way next time!

I was at the Junior Jack Camp this weekend, and there was a guy collecting all the Jack hearts and livers from the discarded jack carcusses. And he was going to eat them. NOT for me thanks.

 

But, Jack stew is wonderful. :)

My dad taught me to take the deer liver slice it into 3/4 inch slabs. Then squeeze it in water until all the blood is out of it. Let it sit in water about three days, put it in milk for four or five hours. Dredge in seasoned flour and fry in canola oil. Take the drippins and make a country gravy and pour over mashed potatoes and buttermilk biscuits with fresh corn on the cob.

 

 

Deer liver has always tasted sweeter than beef liver!!!

Way too much good meat for me to have to eat liver.

 

Both Grandma's did game liver this way: flush thoroughly, just run the water right in the big veins, soak in a salt water solution over night, change the water the next morning and soak again that day. Thin slice and marinate in milk before frying in bacon grease with lots of onions. It actually isn't too bad this way. But I was another kid force fed liver, doesn't happen now, 'll stand my ground.
