Wild Duck/"Chef" Style

Well "Chef" stopped by this evening and cooked some wild duck that I had shot in California over the Christmas Holiday. I had a mixed bag of Widgeon, Teal and Mallard to offer. It was delicious. Here is some pics of the meal. Thanks Chef!

Thank you very much for the invite.

This was my very first time preparing wild duck breast and it came out AWESOME.

 

Pan Seared Breast of Duck with a Jalapeno Honey Glaze

Couscous with Toasted Pinenuts, Sundried Cranberries, and Grated Pecorino Romano Cheese

Pan Seared Roma Tomatoes with Coarse Sea Salt

 

Delicious!!!

Mmmm looks delicious.....great job....I love cooking duck.......I like it with a huckleberry sauce.
