Hams

Recommended Posts

Thanksgiving is coming up and I'd really like a good ham this year to throw in the pit. Kinda getting tired of the cooked ready to eat spiral sliced thats always available in the stores. Anyone got any good brands that they use or prefer? Seems like you used to could get cured uncooked hams but theyre hard to come by in the stores anymore....

Any thoughts websites or places to look? I think lookin at all that meat from vegasjeep has got me thinkin ahead about a month....

I agree on the meat vegasjeep posted. Any ham will cook good in a pit. Just something about pit cooking that taste so good. Try coating it with honey and wrapping in tin foil. I need to get my pit back in service. Thanks for the reminder and let us know how the ham comes out. :)

One of my Grandma's used to turn a venison haunch into ham. She would make a salt & sugar brine and inject it deep into the muscle alongside the bone, then hang it for a few weeks to cure. It was some of the best ham I have ever tasted. I was an idiot and didn't get the brine recipe from her.

it's kind of a long drive for a lotta folks, but "THE PORK SHOP" has the best ham anywhere. it ain't like candy like honeybaked and it ain't salty as heck like some others. they smoke and cure em right there. Greg and his crew really know what they're doing. i hate spiral cut ham. it just turns a ham into lunch meat. they are located on the far east end of combs road, just before schnepf farms road. south side. you can't miss em because of all the cars parked out front. they also have the best bacon, sausage, brats, etc anywhere and you can get fresh pork also. they make green chili burros outta smoked pork that are somethin' else. try em out, you won't be dissapointed. On the East side there is Von Hansons on the NW corner of Alma School and Warner. Very good meat but a bit pricey. There meat all comes from the Mid West though so well worth it.

ALs meat market in Sun City. 30 yrs or so as a butcher. Get's nothing but Iowa beef, top line chicken etc. Makes some awesome sausage and both owners are italian so meatballs and sauce as well. All the italian meats are available as well. He supplies a couple of Q teams, knows how to comp trim etc.

Butcher Bob in Surprise is really good, He gets shipments in twice a week or so so talk to him abotu what you want.

Hobe Meats is also good. they are on 16th st http://hobemeats.com/Home_Page.html

hope this helps

If you've got yourself some javelina sitting around, here's what I did with mine.
