coyote jerky

up here nova scotia a guy who hunts coyotes for the gov't makes and sells coyote jerky. why don't one o' you knuckleheads make some and tell us how it is. Lark.

I bet you have tried to make coyote Jerky Tommy. If not, that is about the only thing you haven't tried. When I took the class to get my trappers license there were two different guys that said coyote was terrible but Bobcat was really tasty meat. I almost threw up.

I've skinned a few coyotes, and their meat was dark colored and not very appealing. Cat meat is white and clean-looking. I've eaten bobcat, mountain lion, African lion and caracal, and would do it again. All had a distinctive but good taste IMO.

Bobcats and mtn. lions are good eating! Meat has the color of a quail breasts. However I don't eat no coyotes...especially when you know what they'll eat (anything).

 

Did you know that in AZ since they are classified as big game animals you HAVE to bring out the meat? Yep, check the regs, when we killed a in 18B ( I called it in, my brother shot it) a few years back I boned it out and the folks at Region III asked to see the meat when we took the lion in. One of my Strip deer hunters (archer) a few years ago arrowed at cat at a water, and when we took it in for the mandatory inspection, they asked again to see the meat. If you don't have it, you might have an issue...I take photos of the boned out carcasses just to show the G&F folks that I did bone it out.

 

I'm telling you lion is awesome! But just like anything you got to take care of it, skin quickly and cool it out, and package just like any other meat. Cook slow..post-3669-0-09543200-1299143501_thumb.jpg

Most third world countries have zero problem eating family pets and other critters we deem unetible but heck every GI I partied with in central and south america ate probably dog, monkey meat, alley cat and whatever else on a stick outside the local bars down in the barrio. Good stuff!

I wouldn't say cat meat is awesome (If I had the choice between elk and cat, I'd pick elk every time), but it's good. It does have a distinctive taste that is impossible to describe because nothing else quite tastes like it.

I asked my dad when I was a kid, "Why don't you eat coyotes?" He said that he didn't think skinny, mangy dogs would taste too good. I haven't ever tried it. If Lark makes up a batch of skinny dog jerky when he gets back from Nover Skoshya, I'll try it.

Lark, thats what they tell all the new guys up there. Have you actually seen anybody eating it. Sounds sorta like a snipe hunt.

it was a front page newspaper article. i tried coyote once when i was a kid. like about 45 years ago. still have a kink in my neck from lickin' my butt tryin' to get the taste outta my mouth. Lark.
