I do not use my backstrap for that though, I have a meat cubber that we got from L.E.M and we do some of the less desirable steak cut's, which make for excellent "chicken fried elk or venison" Gotta love that southern cooking. This. I cook the back straps medium rare over a fire. The "fried steak" method is reserved for tougher, but still just as tasty, cuts. But dang if those don't look fantastic, and makes me want to fry some up this weekend! Thanks for the reminder. My arteries will hate you on Monday.....
