Schmitty Report post Posted February 6, 2010 For a good old fashioned breakfast sausage look for the AC Legg old plantation standard breakfast sausage mix #10. Add enough fatty pork to your venison and it's pretty similar to the hot and spicy jimmy dean. The best part is that a packet to do 25 lbs of meat is only $2-3. I've misplaced my favorite italian recipe. For Brats, I use the german sausage blend from zach's spice and add a bit of corn syrup and black pepper to the mix. For smoked, I really like the Dobesh blend w/ a bunch of Jalapeno's mixed in. For Chorizo, I've got a pretty good recipe that I've got written down somewhere, I've never tried a commercial blend. I buy all of my spice mixes from allied-kenco.com. We also make up a bunch of snack sticks and jalapeno cheddar summer sausage each year from a recipe that's on the texas bowhunters website.
