Big or Bust Report post Posted September 28 3 sweet potatoes cubed in 1/4"ish squares. 1 onion diced..3 garlic cloves. Sautee for 10-15 minutes until both are soft and cooked through stirring. Other cast iron, 2 slices of diced bacon and grease precooked. Add 1 siced jalapeño, 1/2 red bell of other sweet pepper, few green onions diced, more garlic, salt pepper..sautee until soft. Add this to main pan of onions and sweet potatoes and turn up hest and get some texture, maybe 5 minutes.... I have to make sweet potatoes savory for me to enjoy them. It’s a recipe I love but rarely do, I usually cube the sweet potato’s and add purple onion, mushroom, calabicitas squash, Brussel sprouts, carrots and season with garlic pepper and olive oil.
