3 sweet potatoes cubed in 1/4"ish squares. 1 onion diced..3 garlic cloves. Sautee for 10-15 minutes until both are soft and cooked through stirring. 

Other cast iron, 2 slices of diced bacon and grease precooked. Add 1 siced jalapeño, 1/2 red bell of other sweet pepper, few green onions diced, more garlic, salt pepper..sautee until soft. Add this to main pan of onions and sweet potatoes and turn up hest and get some texture, maybe 5 minutes....

I have to make sweet potatoes savory for me to enjoy them. This fits the bill perfectly...

It would be good with diced ham, green Chile, etc. Kind of a make it your own deal....

Going with pulled pork, started at 230 this morning.  Almost done.  Had to wrap to get it done today.  Low and slow.

 

If I remember I will post another picture.

It came out great! It’s a recipe I love but rarely do, I usually cube the sweet potato’s and add purple onion, mushroom, calabicitas squash, Brussel sprouts, carrots and season with garlic pepper and olive oil. Baking dish in the toaster oven for 35 minutes makes lunch side dish for the week. Cook some pork tenderloin or chicken with it and your set.
