Which Market?

Mekong over on SW corner (roughly) of Dobson & Main.

Edit:  Not sure if you've ever had quail eggs or not but honestly, to me they didn't seem that special at all.  Basically tasted like any other egg, to me.   Though for presentation in the dish, I guess it was good that they were small.

Yeah I used to shop there a long time ago and remember seeing quail eggs there. I'm headed there tomorrow to see if I can find some masala. I plan to cut up a pork roast and add it to that with some cinnamon, fresh ginger and other spices and let it rest for 24 hours. Once it's cut up if I need more meat I am thinking of getting some goat.

I have a pumpkin and will cut open the top, take out the seeds and put the pork into it then cook it in the oven for about four hours. I think it might benefit from adding something green like maybe kale or epazote. Kale will probably get a quick blanch so it isn't too strong. I might even layoff and add it in half way.

Got 3 quail today. Had them and some coues deer. Coues deer is a year old and still tastes like the best prime rib. Every time I taste coues I think it’s actually worth killing those cute little things.

Elk flat iron marinated in a sweet teriyaki/chili marinade. Vac sealed for 12 hours to draw in the flavor. Smoking at 225 for 90 minutes . Paired with broccoli and home made egg rolls. My goodness did it come out better than I expected!!!
