Ribs were about perfect. Smoked to 100 degrees at 220 with hickory, then seared on open fire. Seared to a medium rare/medium. Pics are sideways. Try making a tri tip sometime but take it up to 203-205 on the pellet grill like you would a brisket..only way I cook them anymore.
