I had them do 5 mil bags, all the fish looks 100% like it was caught yesterday. The stuff I vacuum seal, has a 3 to 6 month freezer life. Fish tasted as fresh as if was that days catch. Will likely match them with some mangos as soon as I can get to the Asian store for some good ones. Made some pico today with store bought produce (jalapeños not ripe yet…). Fry’s has whole brisket on sale, for anyone interested. Just put this on to smoke over night Downside of sticking with my old garage sale smoker is that it won’t fit a whole brisket! 😭 Had to cut off the short end.
