Never did anything with a neck except for grind so im kind of excited to see how it turns out. Probably gonna smoke it saturday. CatfishKev Report post Posted April 26, 2022 Ok. So saturday morning put it in the smoker with a generic pastrami recipe off the net. Then i found out i was going to tucson to help with the prom dress search (Aurora is too dainty to fit in any of my glam dresses). Time got away from me and it got pulled and wrapped and sent to the oven to finish up in paper. It was in the smoker too long and got a little dried out but not too bad. Made the samiches tonight and they came out pretty darn good. I brined it from wednesday until saturday morning.
