Typically you have to plan three to six months in advance. Some places have a standby list for people who cancel. On a goat, just do it yourself. Sheep, again do it yourself. Cattle, I've not been that brave. That's a lot of work and I'm not set up for that.

I would do anything smaller than an elk or beef steer myself. Elk I might would do myself but I don't really think I'm setup yet for those larger animals and it is a lot of work.

We named ours red meat, dinner, etc 

Blackie was a black cow and did not give calves and ate more than her fair share. She was a hog. Nobody likes pigs, but hogs get slaughtered. So, this it was.

She was the first animal we raised and ate. We sat down to eat and my oldest, age 9 at the time, said," Dad, mom...." And a long silent pause.

And I thought, here it comes, she can't eat it.

Then she said, "I'm glad Blackie was such a pig, she tastes good!" I knew then the kids would be alright with it.

Wow, that was 17years ago. Time flies.
