If you cook it like beef just wrap it in foil sooner than a beef brisket and add some moisture. Stock, juice, or fat. Even if you dont add itll be good but its very lean.

The only thing that you have going for you (medically) is that Phoenix has some of the best hospitals there is and your able to use one! Prayers sent! because the only thing Ive shot with my recurve in 15 years was a jack rabbit at 10 feet. Didnt kill it, just went thru both ears! Both are trophies, the close archery hunt is a better experience in my opinion.

Half the fun of smoking to me is the babysitting part. Im not putting in a hunk of meat and leaving for 12 hours. Im home the whole time, I dont mind checking in every couple of hours or even sitting in front of it it and drinking beer for a few hours.

Im with Ross. Wood smoking for me. My first gas grill was this year. The pellet deal seems like a good choice though! If I ever went away from wood thats the way Id go.
