    ADA meeting

    Guys and Gals... As Allen stated, the Arizona Deer Association desperately needs some volunteers. Show up to a meeting, a project, anything to give back. Become a member of an organization that represents us as hunters. They really do fight the fight and will stand up for hunters' interest in front of the commission and make our voices heard. I can't believe that so many hunters are not members. These are a fine group of individuals, from all walks of life, with a passion for Az wildlife as a whole. Go to a meeting and see for yourself. They are transparent and will answer all your questions. Unlike many people perceive, it's not a "good ol boys" network. These are people, like you and me, that love the outdoors and want the best for our wildlife, especially deer. There is a whole lot of stuff that goes on behind the scenes that I can barely scratch the surface when it comes to describing all they do for us. Everyone on the board THANKED ME for just showing up. Guys, these volunteers are the same people that, for years, have been attending, organizing, recruiting, sweating away for all of us. They need to see that all they do is not in vain. We need to rally and support them. I spoke up at the meeting and THANKED THEM for what they have done to hold the organization together. Lets get some fresh faces out there. Some new ideas, new contacts, network, you name it. The ADA board is used to just seeing a few VERY familiar faces at the meetings. You know how that goes, you get burnt out in a sense. There is a wealth of knowledge and goodwill on this board alone. See if you can't join the ADA and add a family member, a friend, while you are at it. http://www.azdeer.org/ Look around the site. See who is on the board, you'll see a lot of familiar faces, thank them for all they do, and back them up.

  10. Tenderloin on any animal doesn't have much fat. That is why it's tender when cooked rare to med-rare. Anything beyond that and you are just killing it, or hate yourself so much to feed yourself shoe leather and cardboard. Here is one recipe sure to please: Season the tenderloin with kosher salt and fresh cracked black pepper Sear it on a hot skillet, turning it to make the outside nice and brown. Depending on the thickness, it should be done cooking by the time you finish searing it. If not, place the skillet into a 350*f oven until done. Remove meat from pan to rest as you make the sauce. Deglaze the pan with 1/4 c of brandy. (careful with the flame) Add a few peppercorns to the pan and swirl in some butter and minced shallots. (onions will do) Finish this off by adding heavy cream and a little dijon mustard to the pan. Reduce liquid until you get a nice consistency. (if it coats the back of a metal spoon, you are good) Slice the tenderloin and pour the sauce over it. You now have Elk Tenderloin Au Poivre Enjoy!

    Looks like you all had a blast! That Mahi Mahi (Dorado) is some fun sportfishing. Out of all the fish there, I LOVE cooking and eating black seabass. It's very rich and is awesome broiled.
