I was hoping some of you that reside or spend a lot of time in the White Mountains could tell me a little about your AT&T coverage. Most of my time up there is either spent in the area around Clay Springs or Greer. Thanks for any input

  4. I received a request today to repost this Jerky recipe I had originally posted a couple of years ago. It is by far my easiest and most popular recipe. Since posting it I’ve easily made over 100 pounds worth of this for family and friends and it has turned out great each time. Even those who don’t like game meat love it, just don’t tell them what they are eating till after. I’ve used it on deer, elk, and hopefully antelope in the very near future. Even if you have to buy a jerky gun and dehydrator, you will probably sale A LOT over meat processor prices for jerky. You can find the jerky gun on Amazon for about $15 at the following link: http://www.amazon.com/Nesco-BJX-5-American-Harvest-Jumbo/dp/B001795P3K/ref=sr_1_1?s=home-garden&ie=UTF8&qid=1441921016&sr=1-1&keywords=nesco+jerky+works Sweet Mesquite Jerky Thoroughly combine these ingredients together in the following proportions: · 1 pound of ground meat (Prior to buying a grinder, If I didn't have burger I would just throw a couple of pounds of cut up steak or roast in a food processor for a minute. It works just as well) · 2 Tablespoons of Sweet Mesquite Seasoning · 2 Tablespoons of brown sugar · 2 Tablespoons of Worcestershire sauce I have found the Sweet Mesquite Seasoning can vary in the level of spice. I love spicy food but my wife and kids don’t so I suggest doing the following. The proportions listed above will usually make a mild jerky. But I don’t like to make a big batch without testing the spice level first, so once everything is combined I will make a thin quarter size patty and fry it in a pan, then taste. From there you can add more or less seasoning, brown sugar, etc. to suite your taste. Continue testing before throwing it all into the dehydrator. Use a jerky gun to squirt it onto dehydrator trays. I then put it into my Nesco dehydrator at 160 degrees for about five hours. I make one big spiral on each tray then cut it into 4-6 inch pieces. Since there are no preservative in this, be sure eat it, refrigerate, or freeze it right away.     A friend suggested stuffing a breast or two into a hollowed out jalapeno with cream cheese, wrapping in a slice of bacon, and then grilling. I may try that next time.

    Nothing fancy. Just deboned the breasts, let them soak in milk for about 6 hours, them marinaded them in Italian dressing for a few hours. Then I'd stack a slice of onion, a breast, a slice of jalapeno, a breast, and a slice of green onion. Wrap the whole thing in a half slice of bacon and stick them on a skewer. Lightly salt and grill. Next time I may baste with some sauce during the final few minutes of grilling and let it caramelize. Once they are cooked, they really hold their form. So you can slide them off the skewer and have a plate full of perfect 1-2 bite poppers. They heat was very mild, so I'll use more jalapeno next time.

    Replaceable blade knives

    They are bigger blades and slightly more expensive. The cost is about $2 per blade (Havalon are about $.75 per blade). On my last elk I went though 3 Havalon blades due to breaking and dulling, but like you said they are cheap. Just don't try to do any lifting or prying at all. One blade snapped while skinning just by lifting the hide a bit. Haven't used the Outdoor Edge on an Elk yet, but I did an entire coues deer with the Outdoor Edge and the original blade is still razor sharp. I just used the same blade to debone my dove breasts and it slid through like butter.

    I've had both the Havalon and the Outdoor Edge. My Havalon was "misplaced", which is why I got the Outdoor Edge. I'd say both are excellent knives and I'd buy either again in a heartbeat. But I'll give the nod to the Outdoor Edge. As others have said, it is a bit more stout and sturdy. The blade insert is much better at keeping the blades from snapping, not to mention the blades themselves are a bit larger. My one negative on the Outdoor Edge is that the insert spot for the blades has a very narrow opening they tends to get full of "stuff" (meat bits, hide, etc) and it can be a little bit of work to get inside there to clean out after the hunt. Not a big deal, and I would still buy it again.

    Question about Bird Dogs

    My wife is a huge dog lover and has been on me about getting another dog for years (we have a small house dog). She wants a lab and after hunting with a lab this morning I'm starting to give the idea a bit more thought. We have had small dogs and dobermans, but never a hunting breed. I'm curious to know if a male or female lab tends to make a better bird dog or does it make much difference. Any thoughts or opinions?

    Dove Success!

    We had a great morning of dove hunting! My son and I met up with Big Browns, his boy, and CouesPursuit with his black lab. All 5 hunters limited out with a total of 75 birds. The boys had a great time and were knocking them out of the sky left and right. Big thanks to Big Browns and CouesPursuit for allowing us to tag along and the pointers. Can't wait to do it again! Lots of great dove breasts, currently soaking in milk. Soon to be transformed into grilled bacon wrapped jalapeno poppers for the ASU game!

    Where to rent a toy hauler?

    PM sent. FYI, I have had really bad luck renting from guys on craigslist. If you go that route make sure you look at the toy hauler before putting down a deposit. I made that mistake ONCE. Toy Hauler looked brand new in the picture. What I picked up was a filthy beat up piece of crap. Guy was a total tool as well.

    This is why I love my 300 RUM. A less than ideal shot will still probably result in a deer without a hind quarter. Tends to minimize the tracking as well.

    AT&T Service Coverage in the White Mountains???

    I can usually get a decent call signal with Verizon on the road to River Reservoir, between Tunnel and Bunch. Was hoping AT&T would have service there as well. I'm not really concerned with great data service. Just like to call and check in at home once a day. Same thing with the Clay Springs area. We have family with a cabin 1/4 mile south of the 260 just off of Rogers Lane. Don't really need data, just the ability to check in with home on occasion.

    Question about Bird Dogs

    Thanks, but I think my wife now has her heart set on a yellow lab.That's how my wife was about chocolate labs. Our last dog was a chocolate lab and after she past away that's all my wife wanted. Then I introduced her to Brittanys. Now she said she will probably never go back to a lab. Brits are smaller, don't shed as much, have less health concerns, are just as smart if not smarter than labs and have lots of energy like labs and aren't as clumsy. Really? Shedding is on our list of concerns. I'll have to share this info with her. What else can you tell me about Brittanys? How high energy? High energy is good, but not hyper. We've had friends and family with weimaraners and short hair pointers, and they were a bit more high energy/hyper than what we are looking for.

    Wow, it was definitely the angle. Huge all around! I remember that guy from the auction in June. He was super excited to win the tag. I asked him at the auction if he had a particular deer in mind. He said no. Glad to see he found a giant.
