250 bucks for diversion sounds like a bargain. You musta not been busted in Gila county where rumor has it that program comes with 1000 dollar fine and 100 hours of community service. Sorry you feel wronged by the justice system. That punched in the gut feeling doesn't ever really go away. Least I know a guy that feels he got the short end of the stick and he said it never goes away. It only discourages honest people from doing the right thing.

I want to make some summer sausage and have been researching it online. My lack of experience shakes my confidence in what I am reading. I have 2 topics I need more schooling in before I make the jump and start packing meat in casings. If anyone can direct me to you tube videos or reading material in these areas I would appreciate it. I am always open to any lessons you guys have learned making summer sausage, tips and tricks, favorite recipes or definite things to avoid. - high temp cheeses, what kinds are your favorite and where do you buy them. - Cooking them in the oven. Temps and duration Thanks in advance.

Thanks for the info. I like the idea of canned diced jalapeños. For this first batch I am not quite ready to wing it. I need more rigid structure or I will end up off the rails. Maybe just like you said a kit is the way to start. I have read a lot about how important the meat/fat ratio is. Some will say the easy way to achieve that ratio is to cut up a pork shoulder roast and use that 50/50 with the game meat And all ground up and mixed will get you your target meat fat ratio. Thoughts? Its also pretty common advise to go right from cooking to the ice bath for immediate cooling but I cannot find an explanation why such a rapid cool down is ideal. Also they say 10% weight for cheese. Does that sound about right? I cannot imagine eating it and thinking man this has too much cheese not sure thats possible. About winging it.... if I have a jerky recipe I like that involves liquids like warchestershire sauce, soy sauce, and liquid smoke can I use that recipe for this summer sausage or are liquid seasonings taboo? Most online stuff is dry seasonings only. Thanks again. Good advice.

FWIW I was deer hunting last year. Driving early in the morning I was going slow up and down this steep rocky road when a Jeep showed up behind me. I had several opportunities to pull over and let them pass but I was a jerk and kept driving the speed I wanted. They had their brights on and KC light bar on high I knew darn good and well they wanted to pass me. In my mind they were just being idiot jerks that wanted to run me off the road. Unyielding I persisted because dang it this is public land and I was here first. I just knew they wanted to get to the same glassing spot I wanted at the end of the road. I wasnt going to give up my spot to some jerk in a Jeep. If these jackasses in a Jeep wanted to get to my spot they shoulda got out of bed earlier. I built these Jeep drivers into these idiot careless road warriors. Well we get to where I want to be and force them to go somewhere else. Well after a half a day of glassing and no deer I drove back down the road to a different spot. When I got to where I was going I looked in the back of my truck and saw that the bed of my truck was empty. Somewhere my tailgate dropped and my chainsaw ice chest and hunting gear fell out. Well I turned my truck around and went looking for my stuff when look who comes down the road. The jackass Jeep drivers. Well turns out they were really nice people who upon seeing all my crap scattered down the road stopped and collected it all and were bringing it back to my camp because they knew it must belong to me. Because they had seen my truck at the campsite and followed me in that morning. Hundreds of dollars of gear all collected returned to me. Plus they shot a deer in the area they moved to and I saw nothing. Anyway there was a lesson of karma with a side dish of humble pie with that experience. People can be jerks, we can be jerks, and even when we think they are the jerks sometimes we are the jerks. This is not to say the OP or any poster since then are wrong. This was just a hunting lesson when I was definitely wrong. I was wrong for not letting them pass and especially wrong for giving the Jeep drivers bad names before meeting them.

Backstory: This last weekend during a fishing expedition to the raging waters of Nelson Reservoir I rigged my kids poles up with a treble hook, worm and a generic bobber 6-8 inches up the line from the baited treble hook. After about 20-30 minutes of not catching any fish my dad asks me why I put on all my kids bobbers on upside down. This then turned into an ongoing debate between me and my dad about putting bobbers on upside down or not. I believe there isn’t a top or bottom. My dad says the “chimney” part should be floating out of the water and that the chimney is the top of the bobber. Question: I am now turning to the wisdom of the internet to hopefully close the door on this debate. Can a bobber be put on upside down? For anyone that says that these bobbers are directional and should be put on a certain way I ask this question; Why, what does it matter if the chimney is up or down? I feel it functions exactly the same way either way it is put. Below is a sample picture of the style of bobber in question. Side note: As it turns out we were not catching any fish because we were using bobbers, upside down or not. Once we swapped out the bobbers for split shot weights we found the honey hole and were pulling out "monster" bluegill faster than we could keep worms on hooks.

Lol. So glad I could help you. honestly I feel stupid calling it "wall art" but after 20 minutes of staring blankly at the screen a better title and discription escaped me. Now accepting offers on this wall art as well as a better name for it. Lol.

I believe there are 2 sets of behavioral standards. One set of standards you apply to yourself and the other set of standards that you apply to others. The formula for the behavioral standards you set for yourself is the legal minimum + whatever other higher code of conduct you want. This standard is only between you and the dictations of your conscious. Any application of this standard to others is inappropriate and arbitrary. The formula for behavioral standards you apply to others is legal = ethical. Any more ethical layering is arbitrary. we can't fairly dictate a set of unwritten rules and code of conduct. Therefore we only have the written law in which to dictate the ethical minimum. May we all hold ourselves to a higher standard than the legal minimum and be courteous to others but may we also not impose our own arbitrary standards on others.

I picked up a "Food Saver" vacuum sealing setup. I have done a small to moderate amount of research but am looking for some lessons maybe you guys learned the hard way that I could learn the easy way. You know the kind of stuff YouTube can't teach you. I bought it to preserve some chicken we buy in bulk. Also plan to use it on the monster elk that will be hitting the dirt early December. Any other uses you guys have come across. Thanks for the help.

I am not asking for help scouting elk. However one thing I cannot scout out or plan for is where the other 400 tag holders will be. Any 3a3c elk hunting veterans willing to help me out with some 3a3c people scouting? Any suggestions on places to avoid? Places that seem great until you have half the tag holders sharing the same gassing spot with you opening morning? People will say get off the roads and hike. That's fair enough; there is A LOT of road access in this unit which makes me feel like it could get too peopley real fast. Elk seem to be spread out across the unit so I don't feel the need to rub shoulders with anyone unnecessarily.
