THanks Chef. I haven't made it before but it looks fairly straight forward. I will braise in Pinot Noir and Beef Stock. I have some fresh pork belly I just picked up at El Super an I will cook that down while ai parboil the meat then sear it in the fat and possibly add the pork belly back in to cook. I will make it in a dutch oven and I think anout 3-4 hours at 275dgf.

I thawed out an elk roast, maybe 4lbs, yesterday. I was planning to make chili but maybe I make this instead but it might be too lean a cut for that without reheating it the next day.

How many points did you have? I have 26 and was looking at that hunt but didn't put in for it because it is such a long drive and felt I needed to scout it 4-5 times to get comfortable with the area. Well there are equal results for firearms too, maybe a few less casualties but the outcome is the same. They are tough for sure. Stinks to loose one but it happens.

Yes. There will be a few random hits due to declined cards and people turning back in tags but for all intent and purpose it has been completed.
