This recipe comes from my best ever brother in law Cameron Mitchell. A very nice alternative to the commonly pan fried trout! Enjoy. Baked Sherry-Shallot Rainbow Trout with BrieYeild: 1 trout or two fillets per person Ingredients:1 Fresh Trout {Caught on a fly}2 oz. Olive Oil3 oz Minced Shallots4 oz. Shitake Mushrooms3 oz. Cold Salted Butter4 oz Brie Cheese2 glasses Med. Body Syrah, or Light Pinot Noir Trout:Remove gutsFilet each side of trout removing rib bones and rinse under cold water. Refrigerate Stuffing:Get saute’ pan hot, add Olive oil and Minced Shallots, cook until shallots become clear and soft.Quickly add thinly sliced Shitake mushrooms and saute’ until mushrooms are tenderDe-glace pan of mushrooms with 2 oz Sherry and allow to gradually reduce.As liquids reduce, turn heat off, add 2 oz butter, swirl all and remove from heat, set aside.Add salt and pepper as needed. Baking:Grease a baking panPlace single fillet of Trout, skin-down on panPlace thin sliced Brie on fillet and spread out evenlyPlace Shitake, shallot mixture lightly over brie, saving sauce for later.Place second trout fillet on top and bake, 8 min -350’Carefully with spatula, flip entire trout over onto bake pan.Remove now, upper exposed skin.Place back in oven, three-five minutesPlate and add any excess Sherry-Shallot sauce over trout and enjoy with great friends and good wine!! Posted by Janis PutelisRecently, while attending the RMEF show in Las Vegas, Darr and I came across Chef John McGannon's booth where he was serving up an outstanding chilli and selling his Wild Eats dry rubs and seasonings. I've always enjoyed John's article in Bugle magazine and enjoyed chatting with him equally as well. Darr and I bought a few bags of seasonings each and walked away talking about new recipes for javelina sausage. The recipe I'm sharing today came from the back of the Juniperberry and peppercorn rub package. I had already used this product for grilling steaks with success, but when I took the time to read the package and found this recipe, I immediately checked the shelf for bourbon and started planning the next eve's dinner. Great alone on steaks or as part of this recipe. Simple to prepare with few ingredients and a foolproof sauce. I used steaks cut from the sirloin of a Whitetail doe. My only advice is to go easy on the herbs; a little goes a long way. 4-6oz. steaks1 tbsp olive oil1.5 tbsp Juniperberry and peppercorn rubsea or kosher salt to taste2 oz. bourbon1 tbsp strong Dijon mustard2 tbsp butter1 small onion, sliced1 tbsp chopped parsley, thyme or sage Season the steaks with the rub and salt and let sit 30 minutes. Heat a heavy gauge pan over high heat and add the oil and steaks when very hot. Turn the steaks after a min or two.(Very important! Don't overcook your elk or deer steaks) Cook to desired doneness, remove from pan and add the onions to the pan and saute until wilted. Add the bourbon, be careful it may flame. Stir in the remaining butter and herbs and finish the sauce with the Dijon mustard. Adjust the seasonings and top the steaks with the onions.(I like to undercook my steaks and then add them back to the pan when the sauce is finished to make sure they are up to temp.) If you want to stretch the sauce you could add 1/4 c. of chicken stock. More sauce to mop up with your roasted potatoes! This dish was nothing short of delicious and will be showing on our dinner table soon again. I'm impressed with Chef McGannon's rubs and seasonings and can tell you that the McCormick's Montreal steak seasoning has been pushed to the back of the spice shelf. View the full article

Gear Review: KUIU Chugach Jacket & Chugach Pant

By Darr Colburn Darr Colburn wearing KUIU Chugach Jacket and Pants during the archery elk hunt. Another hunting season is in the books. Jay, Jains and I had some great hunts in 2011. I wanted to put the KUIU gear through a full season before I came to any conclusions and formed any opinions. Here is my gear review on the KUIU Chugach Jacket and Chugach Pant. The first big test was during the Arizona early elk season. We got pounded with monsoon rain five of the first seven days of the archery elk hunt. My Chugach jacket and pant saved the day! The pant and jacket were light enough to keep in my small day pack every day. The pants weigh 13.3 ounces and the jacket weighs 17.3 ounces. The pants have anatomical shaping for increased comfort and fit along with articulated knees. The feature I really like is the full leg zippers. The full leg zippers allowed me to quickly put the pants on without taking off my boots. Many times during and after a storm I put the Chugach Pants on while glassing for elk to keep me from getting wet while sitting on the ground. The full leg zippers on the Chugach Pants are great for getting the pants on and off over your boots. The Chugach Jacket features pit zips, articulated elbows, a soft brush lined collar and the best storm hood I have seen. The two draw cords snug the hood down to keep the wind, rain and snow out. I found the Chugach Jacket and pant to be highly breathable and very comfortable to wear. The material has a little stretch to it which is nice. One night while driving back to camp after getting pounded with rain I high centered my truck in a big mud puddle and got stuck. I had my Chugach Jacket and Pants on and was lying in the mud and water trying to dig the truck out for over an hour. When we got back to camp I was amazed that my clothing underneath the rain gear was still dry and clean. The pants sell for $249.99 and the jacket is $299.99. I believe the KUIU Chugach Jacket and Pant are worth every penny. If you are looking for light weight, breathable and comfortable rain gear I would highly recommend the Chugach Jacket and Pant by KUIU. Tippy the Ram-Desert Bighorn Sheep AZ

The nickname came from Darr. He kept talking about the ram that kind of tipped up. So we started calling him Tippy. Sometimes the names just come from nowhere. It definitely makes it easier to keep track of rams between us when they get a nickname. We even had one named "pinky" last year. Don't ask.............. -

Darr and I had seen this ram in Unit 44B North that we nicknamed Tippy several times over the 2009, 2010 and 2011 scouting seasons. These first pics were captured on 10/26/10 prior to Ron Arndorfer's Hunt. Tippy continued to grow and then was harvested in December of 2011 by hunter Brad Reily of Yuma. Long Range Shooting & Load Development

I joined up with our good friend Dan Bright today for some long range shooting. Dan has been working on some loads for my .257 Weatherby. We were joined by Dan's brother, dad and my brother Kirk. Kirk just purchased a .257 Weatherby from the Outdoorsmans so it was a perfect excuse to join us. We shot for a couple of hours before the winds came up. Dan brought a gong made out of 1/2 inch steel that measures 12 inches tall by 18 inches wide (about the size of a deer body). We put the gong out at 695 yards. It did not take long before we were hitting the gong almost every shot. This is great practive to see what your gun will do at long range. I look forward to tweeking the loads and seeing which one I like the best. I am shooting the Nosler 110 Grain Accubond bullets. Most of the loads were going 3450-3500fps. I love shooting the .257 Weatherby because it shoots flat and hits hard. The Outdoorsmans Ballistic Turret was amazing for shooting long range. View the full article -
