    Meat from animals in the rut

    Grind it, season with ground meat jerky cure, smoke, and enjoy. I shot the lead cow on my 1st elk hunt and she was practically inedible. Tried all the tricks in all the books to no avail. Enjoyed the jerky all summer on fishing trips, fall dove hunts into preseason scouting. Everyone loved it.

    E-Scouting

    Thanks James!!! Had not thought to contact the Forest Service. I am always pissed off about "road closures" locked gates, fire danger closures etc. Seems they don't want anyone in the forest... I will take a look at their website. Seldom Drawn, I will certainly look at my old spots as they are tried and true. Found those areas scouting for a friends cow hunt. I just don't want to spend too much time scouting the areas I already know. I also don't want to repeat past mistakes and scout areas that I can't reasonably get to due to road closures. I also don't want to hike in 3-4 miles only to see quads and trucks either on open roads I overlooked or illegally using closed ones. Sucks to put the work in and have yahoos drive in, slam doors, and generally ruin the solitude you were looking for. What doesn't suck is having the chance to get out there and scout for an upcoming hunt!!! Thanks for the comments and suggestions.

    Even with raised beds it is best to double dig. At least bust up the ground under your raised beds to help drainage and deep roots penetrate. Craigslist is a good source for free soil and manure. If you are looking for easy and ready to plant try sandy loam from Pioneer Rock. They will fill your truck bed or deliver.

    E-Scouting

    Thank you to everyone on this site that posts intelligent conversation. I know I have benefitted from the many collective years of wisdom members posses. I was fortunate to draw a late rifle bull tag in 5B. I tagged my first bull there about 5 years ago and helped my nephew tag one in 2012. I love the unit and it is certainly large enough to learn more about it every hunt. I will share general information with anyone who can benefit from it. I plan to check out some new areas within 5B this year. With that said I am wondering about access off of SR 87 via FR 211. I believe that road was closed via a locked gate. Before I spend too much time scouting areas around Long Lake is access available in late November/early December? Maybe off of Lake Mary Rd? What will be gated and locked by the Forest Service once snow falls? I spent ample time scouting all summer and fall but with Halloween and Thanksgiving missed the month prior to the hunt. It was an unpleasant surprise to find roads I was familiar with closed. No snow and yet still locked. Fortunately plan B worked out. Any help is appreciated. Eric

    How go you all cook venison roast

    http://www.lemproducts.com/recipe_view/14 Corned venison I love rare to medium rare venison but am not a fan of it cooked well done. Sausage is great for tougher cuts and I found a great recipe on the Lem website for corned venison. I tried it for saint patti's day and it was a big hit. I have done more since with both deer and elk roasts and they are all great. The best part is corned venison and hash from leftovers. Easy to do and no more roasts sitting in the freezer. I plan to do some more with the last couple chunks of elk from my nephews bull from a couple years ago. I might try to cook a big corned elk roast with a beef one to see if the fat from the beef makes the end product a little more rich.

    Javi Tamales

    Couldn't hunt today so I decided to start some Javelina Tamales. I haven't made with tamales with Javelina before. I had a hindquarter in the freezer and decided to bone it out and grind the meat with some pork. I wanted to taste the Javelina before mixing so I ground some with just a bit of pork fat and browned it up. I have to say it was quite good. If I had more Javelina meat I would go with just it and about 10% pork fat. Boned out and trimmed, the hindquarter yielded about 3 lbs of cubed meat. I added about 3 lbs of pork shoulder and 1 lb of pork fat and ran it all through the LEM grinder (plug for the LEM #8 grinder). I then browned all the meat with a little garlic salt and black pepper. I had to do it in batches so as I added browned meat to the crockpot I also added green chile enchilada sauce, chile arbole, and garlic. I plan to let this simmer all day. I will add a few more pictures when we assemble the tamales.

    The green chile came out so good that I never went all the way. A warm bowl with tortillas was all I needed. Then enchiladas with a fried egg for breakfast, green chile quesadillas for lunch... Yummy.

    what do you do with your kill

    I tried the vinegar soak with my last pig. Using some scientific logic - the "stink" is oil based and therefore can be removed easiest with an acid based wash. Cider vinegar is both tasty and acidic. I was as careful as field conditions would allow on a warm spring day. I hurried a bit because I was more concerned about mid 70's warmth, intense sun, and a 20 minute hike out. I carefully quartered the meat trying to keep all contact with hair and hide away from the meat. The quarters were clean but still a bit "skunky". The meat went on ice within 30 minutes and when home I soaked it a few hours in cider vinegar, water and ice. Patted it dry and the smell was 100% gone. Freezer aged for over a year and then ground with a little pork fat. Browned up with a little garlic salt and black pepper - it was as good or better than ground pork. See my post in the recipe section. I added ground pork and made green chile. I intended to make tamales but it was so good that I have been eating it by the bowl, in new mexico style enchiladas, and in quesadillas.

    What do Coues deer taste like?

    Taste like Chicken JK - Awesome, tender, sweet, nutty, yummy goodness. Salt, pepper, dash of worchestershire, dash of olive oil, let them come to room temperature in this marinade and then grill rare to slightly medium rare. Pull off the grill or fry pan and let rest under loosly tented for 3-5 min and enjoy with a nice red wine. Now I am hungry again...
