there has always been a small contingent of coues in a small-say 10 sections at most-area in 3b. i thought i would give them a look-see on the opener before i head out after those big cedar burros'. walked about 2 miles during the morning where i have seen coues and concentrations of tracks. nada. not one deer track. not coues. not burro. very few elk. oh well. mysterious but i'll get over it-some of these cedar bucks push 300 lbs. another year no coues chops. lee

i might be a bit of a wapiti snob-i would eat elk three times a day if i could get it legally. i gave up on ground elk in most recipes long ago. but. still good for regular old tacos and fantastic as stir fry. crazy huh? a skillet of fresh garden vegetables, lots of diced onion, heavy on the spices and light on the soy sauce. rooster sauce once in a while. for chili-world class elk chili that is-i cook a roast or steaks in cast iron and then dice them into very small carnitas. but the key is the hatch chilis or pablanos. use about twenty peppers for a pot and keep it almost like a soup. lee
