Giant Coues ****B&C Score updated*****
tjhunt2 replied to Coues 'n' Sheep's topic in Rifle hunting for Coues Deer
Congratulations Jeremy on another great buck. I'm sure you worked your butt off for him. Can't wait to hear the story and good luck with the wife's hunt. TJ -
Sounds exactly what I have done but many years ago. I now turn all mine in to sausage I make myself and only wish I could get more meat off one of those pigs. If someone close to me in Mesa shoots one and cares for it properly and gets it on ice right away I will be more than happy to take it off your hands. It's all in the way you care for your meat once it's on the ground. Lots of good advise in this post. TJ

Yep, What she said!

jk Holy Cow! That was some piece of art work you handed me there. I was understanding everything quite well until I got to the end and forgot what the beginning said. Don't know if I can fit all that great advise in my head at one time. I think I hear Mrs. Santa stirring around and it's about time she got up cause I can't wait to try some of this stuff on her. Thanks Coach! SunDevil.....now I like your kind of thinking and will let Peg read your reply.

I knew I shouldn't have looked at this post. I am so hungry after looking at this. Great job Jason! That roast looks like you hit it on the nail. I actually believe I can taste it as I'm typing. Thanks for sharing and yes we are very fortunate to have Chef here whenever we need him to answer our cooking needs. TJ

Thanks TJ, My wife Alicia along with Harley and Drake wish you, Peg and Lexie a Merry Christmas as well. I really wish I could've made it to your Christmas get together last week but we had a big family snow trip up north. I never seem to be able to make it to the get togethers, always something going on! One of these days it'll work out! Harley, while nosing around in the presents under the tree, found one that is for my wife's cat and when moved it squeaks! Harley is certain there is a baby in there for her and has guarded that present ever since! No cat or dog dares go near that present! LOL! Both Harley and Drake are excited for Christmas day! Such is the life in a house with only 4 legged kids! That's funny that Harley is guarding it. I know what you mean about a house with 4 legged kids. We went x-mas shopping last night for the dogs. Thanks again for the Holiday wishes. TJ

Coach, thank god Chef took the time to explain all that because I was going to say the exact same things. lol The only reason my prime rib came out so spectacular was because I had my wife looking over my shoulder but most of all having Chef pick out the best piece of meat Van Hanson's had in the store. Good luck on yours and take some pictures. TJ

Thought I would share a present Peg & I recieved at the get-together Friday night. With Peg liking to cook and me liking to eat it was the perfect gift. Peg came down with some sort of bug so I was left to do the cooking. I looked over many recipes before running to Fry's and decided prime rib, steam aspapagus, and bake potatoes were the menu. Here are a few pics as I prepared this awesome gift of meat. A few ingredients. Garlic inplants, olive oil rubbed, and kosher salt & fresh ground pepper. Cook in 350deg. Take out of oven at 135 internal deg. Steamed the sparagus. testing the red wine bofore adding to the Au Jus. Tented for 20min. I let Peg do the honors. Classic tv try The next day leftovers in to frence dip Thanks so much Hector aka Chef.

I'm no expert on pigs but I have killed my share over the years and have spent alot of time scouting and watching these critters for hours, days, and years on end. Those who know me know I'm quite comfortable being among them. They are my favorite of all big game animals. There was a time I would bet anyone I could find a pig any given day. Well, times have changed and I won't take that bet now. I have seen mt lions completely take a toll on a herd where there aren't any pigs there anymore. If a herd got low in numbers I would not hunt that particular herd and hunt another. Pigs have several bedding grounds and if you locate them you have just upped your odds of harvesting a pig. Like Bill said I have found these pigs will use the same area decades after decades. I don't believe pigs will ever leave an area and not return. Sorry Coach! I also skin out the hind legs before tagging one so there is no hair to fall on the meat while skinning. I skin them out as soon as possible and put a game bag on them to keep any hair from coming in contact. I never touch the meat while skinning and use a knife to remove any hair. Get it cooled out as soon as possible and on ice. I could go on and on but won't waste no more of your time. Pigs are pretty predictable if you learn their territory. I have been taking pigs from several different herds for years. I never try to shoot a female but it happens. All my pigs called in with a call have always been males. They are a family that will stay together or regroup after splitting up. If you split the herd stay still and they will be back to relocate among themselves. Just a few things I've learned over the years. Happy hunting! TJ
