I like where you’re going with this, but one thing to consider is that in order to exchange hot for cold efficiently, the sous vide circulates the water. Stagnant warm water with a big chunk of 40 degree meat would probably take twice as long to cook, maybe more, as the temp around the food would try to equalize. -

Definitely a major benefit to this type of cooking! When breaking down meat from the store I usually pre season most of it before sealing with the food saver. This makes it SUPER easy to just drop it in the pot and have meat ready at dinner time, -

My wife has a tendency to almost over use the sous vide because of its simplicity! I feel like its a great crutch for a cook who lacks confidence when it comes to finished temps etc. I can pull a piece of meat off the grill and know its cooked to the perfect temp but she struggles with it. The sous vide style of cooking helps her a lot in that manor. She will throw some chicken breasts in a marinade in the pot for a couple hours before dinner at 145, and just sear them whenever the rest of dinner is ready. No stress, no timing, and no “is this safe to eat?”. -
Those are some dang good looking sandwiches! I may have to do something similar over the weekend.

Got to looking back at a history of some of my favorite meals I had made so far this year. Lots of wild animals in there and a couple with domestic raised meat, mostly bbq stuff. Pics were saved from my instagram history so some have captions as such. The post is heavy on the pics. Hope I make you guys hungry! @az_outsider

Not positive what the rabbit was, that was almost a year ago. If I were to make it for dinner tonight I’d 1/4 the bunny, dip in some flour and brown it in a pan, before preparing it just like a beef stew. Let it cook until the meat is just getting to where it might fall off the bone and add the veggies. Cook for another hour and serve with biscuits. The roast beef I did with my sous vide. If you aren’t yet familiar with that it is hot water bath cooking, which allows foods to be cooked to an exact temperature throughout. This means that rather than the middle of your steak being rare and the outside well done, its all med rare, etc. I took a big chunk of a Coues roast [I think it was a top round], seasoned it with cracked pepper, sea salt, and rosemary with a little pat of butter, and sealed it in a food saver bag. Cooked at 132 degrees for 20 hours before popping it in the fridge overnight. When we were ready to eat it, I removed from the bag and sliced ultra thin, and dumped the juice from the bag in a pot and heated with a little garlic and some beef broth to make the sauce. This is where a good roll and some good mustard really shine. Serve however you like your sammies, and enjoy.

Very loosely based on this, stolen from allrecipes.com just now: 5 dried Anaheim chile peppers, stemmed and seeded 5 peppers guajillo chile peppers, stemmed and seeded water to cover [I used a modelo and some warm water] ¼ onion or more if you like onion like me 1 tablespoon mixed spices, or more to taste [cumin is great here as well as a Goya packet shown below] 1 tablespoon salt and ground pepper, or to taste 6 bay leaves Basically boil the peppers [they come dried] in the liquid until hydrated and tender. Put them, the onion, and some liquid and the spices in a blender and blend until smooth. This is where I use a crock pot but this could easily be simmered on the stove. Add 2-3lb of whatever cubed game meat you like to the pot, pour sauce over it, add bay leaves, and simmer or slow coook until meat falls apart. Pro tip: When warming your tortillas before making tacos, dip them in the juice first and fry them in a pan with until slightly crisp. Best tacos ever! Serve with your favorite fixings, but they’re great with a fresh or canned avocado salso such as herdez.

Unknown brand, but I purchased it from a friend who ordered the wrong color for $65 years ago and never used it. $25 Black Hawk serpa in tan, for SIG 220/226 New in package appears to be complete $40 Hand made custom tan leather pocket holster for Kel-Tec P3AT .380 with mag pouch. Very good fit and finish by local craftsman. $45 Alien gear tucker holster for Glock 19/23 used a few times. Bad butt holster and very comfortable to wear. Was very expensive when purchased but its been sitting in a drawer for years. $10 Black Hawk IWB size 0 nylon holster new in the package. I love these things and have a lot of them. This one doesn’t fit anything I own. -

If you do Facebook, there are a couple great rhino related groups on there with a lot of info shared. Most guys have great reviews of the elka replacement shocks. For a hunting rig the stage 1 shocks would be fine for you and would ride a ton better than stock. You can get them on eBay.

Bought this and then sold my camper before I ever used it. Paid a couple hundred bucks on amazon but its been way too long to return it. Was purchased for a Lance 1126 11’6” slide in camper. Advertised to fit anything in the 9-12” range. Has rear roll up option to get into back doors without removing the cover. Asking $150 obo. In East Mesa near Power rd and the 60.
