Very cool of you to help out. Love the goat in the first pic! Some of the coolest people I've met have been on hunts. When my kid Caliche killed his cow a dude and his kid showed up just to help us load her up in my truck knowing that we could probably use the help. That will stick with me. I regret not getting his phone number. Thanks for sharing

This is super popular back east where I grew up and it's super tasty. Serve cold with cheese and crackers or with pretzels. I like mine in a little hot mustard. This is the Cabela's version but I think I'm gonna try the bearded butchers blend next time. I highly recommend you guys give it a whirl. Only so much smoke penatrates the casing, I'd highly suggest adding a bit of liquid smoke in with the seasonings.

Once in awhile we actually find out at the deli counter. Never found it with the regular pre-packaged lunch meat though

I'm surprised you know what it is. Not joking that's already my next project. I lived right down the road from Lebanon in PA. Already have the stuff in my Amazon cart. I found a YouTuber that has a great video on how to make it I didn't know it until I watch the video but it's actually not a cooked meat it's fermented. Then cold smoked for 48 hours it's also a household favorite food city sells it sometimes

Did a few batches different ways but basically about 5 hours low temp to 155 internal. Recommend an hour or more cold smoking with a pellet tube then start on low smoke first hour then bump up to 200-225 til internal temp. The slower you get to temp is better imo but if you add liquid smoke then do it as quick you want. As soon as you pull them from the grill throw them in ice water. If you don't the casing might stick and pull off some of the meat with it.

This was the last I had of a cableas pre mix. So no recipe but both Cabela's and bearded butchers sell a mix. Probably others as well.

A quick Google search says Leupold warranty is 2 years, and sig is an "infinite warranty". But earlier in this thread someone mentioned dealing with sig warranty sucks so ..

Ok so I love the idea of a rangefinder being able to drop a pin. That's awesome and only sig and luepold have the option. Out of those 2 which would you trust more as far as warranty goes between the two?

I don't know 9 but have you been sitting water in the evenings, all day or just mornings? I'd look for water that is close to thick north facing drainages and sit those if you haven't already.

I had the Cabela's 1hp it seemed like overkill honestly. I figure the .75 is the sweet spot. Lem has dual grind attachments for their #8, 12, 22 where it will do 2 grinds in one pass which is pretty cool. LEM and MEAT both have holiday deals going on right now. I don't think harbor freight makes a grinder anymore.

Looking at ease of clean up and having "enough" power. Will be mostly used for jerky and making my own lunch meat. LEMs 8.5" mighty bite would be just over $200 with the cyber week sale. Thoughts?
