I'll have to try this. We have used javelina strictly for summer sausage, chorizo, b-fast sausage and jerky the last couple of years because in my experience sometimes it is the best tasting meat and sometimes it's horrible and I can't figure out why. We had 3 pig hunts last year, on hunt two, we cut back straps that night and grilled them and they were unbelievably good, then did the same thing on hunt 3 and they were hardly edible. Several years ago we pitted a couple of them along with Elk, Deer, Bear and Antelope for a party and the pigs were gone first.. crazy good. Did the same thing a few years later and I wouldn't have given that pig to my dogs.. just horrible. I can't figure out why so inconsistent so kind of gave up and just use for sausage. All have been killed and taken care of in the same manner--nothing extravagant, but typical field dress, wash and cut. Going to try this recipe though.. thanks for sharing.

Probably a long shot, but I have a quad that I rarely use, but as with me balding is becoming a reality.. especially up front. Take the horns off that deer and I would have said MD head for sure, but I can the hybrid and makes sense. For those of us that need pictures (me me!) to help digest the metatarsal glad identification discussion.. I found this. More than I thought I would learn today.

Yeah, I can't find it either.. but not always something that is evident based on shot and distance... I guess of all the coues deer I've killed, I've never been that undecided based on physical appearance that I had to wait for an tail flip or flag to convince myself.. but then again I've never seen a 140" coues either...

What a great buck, but please do educate me and forgive my ignorance. I have changed my opinion 3 or 4 times on hybrid or coues just looking at the 5 or 6 pictures--Mule deer rack on one side, WT on the other, big brown patched floppy eared head, but I have seen coues with that brown patch too but not as distinctive as this buck. The not quite defining white ring on the nose, but more of the graying from forehead to nose that is more like a mule deer. If there such a thing as a hybrid and you did have a mule deer tag--where is the line drawn here in terms of harvest?

Congrats of filling your tag--I love hunting these little buggers (is that safe because I can't spell all those other words y'all are calling them). Son and I got ours on Tuesday, going up with other son and a buddies kid that still has a tag and hopefully they can get it done......but I see only 1 arrow left in the quiver... come on, don't hold back... lol!

Thanks--son picked up a rifle tag in 2015 (the bigger one) and an archery tag in 2017 (the lucky little sh*!). Since they both would have made book (85 and 75) and close enough in terms of years killed etc, we saw a similar mount on this site and thought would be cool to put together.
