how many of you make your own sausage?
CouesWhitetail posted a topic in Miscellaneous Items related to Coues Deer
Hi All, I just got a large grinder from Cabela's so I can start making my own sausage. I was wondering how many of you guys do your own? Got any advice on which casings to use for bratwurst (hog casing? collagen?)? Got any good recipes for sausage you like? Amanda -

LOL! I got you all beat...with my husband for 15 years before we got married! -
I made a change based on a suggestion by a member. I made it so that the classifieds don't come up with the View New Content. The classified ads are so numerous that they fill up the new content feed and make it hard to see the content that most people come here for...hunt stories and photos. So I figured I would try this for a few days and see if i like it. So far, I really like the change. It makes it a lot easier to see the main content of the forum. Let me know what you guys think. If you are shopping for gear, you can just click on the Classifieds subforum and see all the posts there. I am also looking into a forum add-on that makes the classifieds more organized and easier to find what you are looking for.

Check out what I found the other day in Aravaipa Canyon! I was thrilled! We went in to check on a pair of owls we monitor in there. What's funny is that I walked within a few feet of this ram during the summer and didn't see it! It's a thick spot and so it was not easy to see. I was practically standing on it when I saw it this time. The horn sheaths were laying on the ground and off the skull. The ram has been dead a long time (at least a year). No skin and only a few clean bones. Not sure if it fell off the cliff or was a lion kill or disease killed it. But it was exciting to find! I left the skull there because I wasn't sure it was legal to take. But since then I have talked to some AGFD law enforcement folks and they say since it's not fresh that I can keep it! So we will likely go back in this week to go get it. It was challenging to keep Maggie from chewing on it!

how many of you make your own sausage?
CouesWhitetail replied to CouesWhitetail's topic in Miscellaneous Items related to Coues Deer
Yes I do! I love making my own sausage! Mostly I make it loose rather than in casings, but I make bratwurst in hog casings too. The loose sausage i put in ziplock bags and freeze in one pound batches. Then thaw as needed for burgers or pasta sauce, etc. The brand of casings I used were Natures Best.....they work great. I buy a pork butt roast and remove the big thick slab of fat and don't use that in the sausage because it gums up the metal screen/plate that the meat comes out of. The pork butt/shoulder roast has a good amount of marbling in it and so I cube that up and mix it about half and half with venison. That gives me more sausage and adds some fat to the mix. -

Well, I realized it's about time to decorate the forum for Christmas so I changed the default theme to be the Majestic Christmas design this morning. For those that aren't feeling the Christmas spirit yet, you can change it back to the regular Club theme by looking in the lower left corner of the forum for the words Change Theme. Click on that and select the theme you like. There is a second Christmas theme that is a light color and more snow based that you might enjoy. And there are a few other themes you can try out and see what you like. Merry Christmas!

Some neat little fossils I found the other day
CouesWhitetail posted a topic in Non-hunting trip reports
I took the dogs for a hike the other day in an area that we don't go to very much. While hiking around I saw some fossils in the limestone rocks. Neat little shells. Some of you may know more about what kind of fossils they are than I do, but I LOVE finding this kind of stuff. They aren't lose, they are secure in the rock. -
Our new dog Maggie.....she is helping us heal from the loss of our beloved golden retriever, Julie. Maggie is a one year old Catahoula leopard dog from the dog pound, which means we spend a LOT of time and many miles of activity trying to take the edge off her endless energy level! She is a super smart dog and we are making good progress with her. Now if only we could keep her from harassing her "sister" Sunshine and stealing her treats! She loves water and loves to climb cliffs and trees. She also loves sheep skulls and deer legs

Mearns with the Old Lady
CouesWhitetail replied to Red Rabbit's topic in Small Game, Upland Bird, and Waterfowl Hunting
Go Rica Go! She may tire more easily but I bet she was thrilled to get out there and hunt with you! It's in her blood! Great idea to get the GPS collar for her! When our dog Maura was going deaf and losing half her vision, she would periodically lose track of us and start running around in a panic to find us. I was always worried I would lose her. We are currently using the Garmin GPS collar on our new dog Maggie and I love it. If I don't know where she is, I can check the map and see....it's reassuring. -

A plug is a special way to ID the horns....they drill a hole and insert the plug with an ID number on it. here is a pic of one I found on the internet to help illustrate what it is.

I hadn't heard of the Geiggerig filters and hydration bladder, but just checked it out and they look great! Love the idea of pressurized and on demand filtered water. do you have a prefilter you use for murky water with that system?
