New recipe for me. Turned out great on the Traeger. Accidentally went to about 150 internal temp but it was a nice medium throughout. First time trying a compound butter recipe but won’t be the last. https://recipesworthrepeating.com/smoked-elk-roast/

Here is a belt grinder I’ve had for a few years. Uses 2.5”x48” belts sell for $500 new at Texas knife maker supply, I want $250 which includes a box of belts. grinder is in good shape, has a gouge out of the drive wheel but that doesn’t harm function. I won’t ship, too heavy, you can pick it up in Flagstaff I added a picture of a knife I made with the grinder so you can see what it’s capable of. ( not included) Geoffrey

Just got my muzzleloader shotgun AZ Gould’s back. Soren Tucker, who works for Weller’s Wildlife Studio in Tucson did the work for me. He does amazing work! Nice to have a great bird taxidermist back in the state after a brief hiatus. Spur Taxidermy is his company for all bird work outside of Weller’s!!! Gone Roosting!

I'll take the rest. Bison shanks for Osso Bucco Brisket for low and slow smoking and corned bison Two HUGE hind quarters with subprimal cuts for slow braising and ground bison Flank for marinating and grilling over pecan & oak plus short ribs for braising I'm ready!

People build fences to keep elephants contained. Don’t think it’d be that hard to keep a bison out. There are 10,000 wild horses wrecking habitat across the state that the feds will do nothing about but they’ll slaughter the few hundred bison (native species) inside the park? Nice move feds. What a joke.
